Copy ;) My Granola Recipe

Look, if you had asked me last year if I would ever share recipes on the Copy Compass blog, I might’ve laughed it off. Yes, I post about my bread adventures on Instagram quite often (and I swear, someday I’ll get around to making a Reel to showcase those recipes), but I never imagined that recipes would make their way to my website.

Until I perfected my big-batch granola recipe, that is.

I mean…

You can put your granola in a cute little countertop jar for added pizzazz. I made this batch last week and it’s already time to make another!

I modified several different basic recipes to come up with the perfect, hearty granola base. You can add just about anything to this granola and I’ll expand more on that at the end. I think the coconut oil is what sets this recipe apart, but I also love how simple it is to whip up. Here it is:

Wet Ingredients:

  • 1/2 cup melted coconut oil

  • 1/4 cup maple syrup

  • 1/4 cup honey

  • 1 tsp vanilla extract

Dry Ingredients:

  • 4 cups rolled oats

  • ~1.5 cups chopped nuts of your choice (I like pecans and shaved almonds)

  • 1 heaping tsp salt

  • 1/2 tsp cinnamon

INSTRUCTIONS:

  • preheat your oven to 350

  • line a large baking sheet with parchment paper

  • in a large bowl, combine and mix dry ingredients

  • in a separate bowl (I usually do this right in the large measuring cup I use to melt the coconut oil), combine and mix wet ingredients

  • pour the mixed wet ingredients into the large bowl with dry ingredients and mix thoroughly (like, really thoroughly, every single oat should be lightly coated)

  • spread the mixture across your parchment-lined baking sheet, patting down to create a compact, level surface

  • put into the oven

  • after 20 minutes, remove the granola and thoroughly mix on the pan before spreading back out and packing it back down

  • return pan to the oven for another 10-15 minutes, until granola reaches a deep golden brown color

  • remove from the oven and let cool for at least 45 minutes, this will allow the granola to set, dry out, and form large chunks

  • after granola has cooled completely, transfer to your desired container(s), preserving as many or as few clumps as you desire

We put this granola on yogurt almost every morning, but also enjoy it as an oatmeal topper or as a trail mix-style snack.

Once the granola has cooled, you can add any additional ingredients you’d like.

We enjoy adding:

  • dried fruit, especially tart cherries or mango

  • chocolate chips

  • more nuts

  • additional seasonings

  • sunflower seed kernels
